Started with a 26 Trophy on my 2008 Cougar FTD (250 ProXS). Slow but acceptable holeshot, good top end at 83.9 light load, cool weather. Went to a 26 Fury; better holeshot with 82 top end, light load and cool weather. However the 26 Fury has a terrible hole shot in hot, humid weather but top end remains good at 78-79. Fill the livewell though and it takes forever to get out of the hole. So, just purchased a 25 Fury and the boat leaps out of the hole with a heavy load and full livewells. Top end is down to 77 but I can live with that for the summer months. Cant comment on a 25 Trophy but after my hole shot experience with the 26 Trophy and in your shoes Id only consider a 25 Fury.
