Frank, We think if the impeller has been checked and the Impeller housing, as well as supply line to the block, it must be a faulty sender or gauge. The 04 Opti has the ability for either analog or digital readings. Is your gauge Smart Craft or old fashioned Analog? If it is Analog, we suspect the gauge and your mechanic can hook their DDT to the engine with a tag line and monitor the WP while you are running. That is simple, and if he has a laptop, and understands the software, he can read the actual digital pressures that were listed without going to the lake. It sounds like a little has been assumed trying to verify your case instead of researched. Give your “wrench” a bit of time and some suggestions.
