Well, I got to go Amberjack fishing last Tuesday. What a rush, hardest fight Ive ever had. We ended up catching 5 and keeping 2. The 2 we kept were both over 25lbs. I caught one of those jerking a 6oz spoon type bait in about 60ft of water. Man what a fight. We also caught 35 Vermilion Snapper. Needless to say I cant get another bag of fish in the freezer. I just grilled 4 nice pieces of the Amberjack on the grill and last week I fed 16 people on Fried Snapper with some fried gulf shrimp and oysters. Man I love the fresh seafood in the South.
