I have a 2000 Pantera Classic with a 2000 Mercury efi that I bought a few weeks back and got to take it out today for the first time. I ran the boat a few times up and down the lake and it runs really well on top end. However it is extremely slow and sluggish coming out of the hole. I goes up to about 3000 rpms and takes around 10 seconds before it will start to plane out. The current prop that is on it is a 25p tempest plus. Any advice or tips would be much appreciated.
are there any plugs in the vent holes on the prop? If so you might try removing those. What kind of top end speed are you getting and what is max rpm on top?
Yes I think all the plugs are in the vent holes. Well, I didnt have much of a stretch of water to run today as most of the lakes are froze here in Ky. In the short stretch I ran I got up to around 60 mph and around 5000 – 5500 rpms.
i would pull the plugs and run it. Should be much better on holeshot. Your rpm might flare up when the nose breaks over, if so try putting a plug back in at a time or get some plugs with holes in them they come with different sizes from solid, small holes, medium etc. You could drill the solids out but if you can buy some hole plugs they arent very expensive maybe couple dollars each. I had a 99 dual console with a 200 efi and it ran pretty good with a 25 four blade. With no water in the wells and just me in it it would plane out in 3-4 seconds. Two big guys maybe 5-6 sec. With water in the wells and two guys it was a bit doggy maybe 8-10 seconds but top end was still pretty good. I think a 24 fury would have been perfect on that boat butt i never got a chance to try one.

Try and barrow somebodys 23P prop and try that.
The 25 is soft on the bottom end, though not that soft. Throttle down full and hold it for hole shot, and lets see what top end RPMs are for sure plus speeds.
Whenever I throttle down and hold it I get up to around 2800 rpm and it will not take off at all I usually stay right around 8 mph like this. What I have to do is trim the motor up just a little and then punch it and slowly trim the motor back all the way down for the boat to take off. When I do start to plane it does so at just above 3000 rpm. On top end I got up to around 58 – 59 yesterday on a very short stretch of lake wot I was hitting around 5000 – 5500 rpm.
I went through this when new to my 07 classic with 200 Opti this past summer. Trim it all the way down, mash the throttle, and let her do her thing. She will come out pretty quick and plane out pretty fast. Trim up but not to much. She should run best around 1/4 trim or a little less. Takes some seat time and experience (learned that reading many many posts on here). I also took someone out with lots of experience in HP boats who told me what I was doing wrong which was basically back out of the throttle when I thought it was starting to blowout. Was the wrong thing to do. It will hook up. Im running a 26 plus however with all plugs in but plugs have medium holes. You will love this boat. Note that chances are the previous owner had it set up pretty good. Id work on getting used to driving it first before playing with anything. At least that is what worked for me.
