With gas in the main tank you have more weight forward that can put more boat in the warter (slower) . With more gas in the saddle tank the weight is in the aft side of the boat. My puma feels different (better) using mainly the saddle tanks. I dont know what boat fuel weighs, but Aircraft fuel weighs 6.71 lbs per gallon so moving fuel around can change how it handles, allot. 6.71 X 32= 214.72lbs to move around. I have not ran any tank dry but I do run it down pretty good every once in a while. Gas can and will go bad, so I want to use all my tanks a little to keep it from vasnishing over. My fuel low % is set up the sme way. When I get low I go back and look at the tank so in a tournament I an relate the percentage on the gauge to run time left. When you do this ensure there is extra fuel in the main tank to get back to the ramp. I also look at my RPMs to see how much they effect my fuel comsumption. Good luck Russ.
