Guy a good thick zip tie will hold your license plates on just fine. I allows them to be free floating and not so stiff when going in and out of the water.
I have a 07 sabre when i took delivery of the boat it had the flippin deck in I fished with it in one season and decided to take it out to see how much different it was and to this day I have not put it back in. It does make your deck bigger but unless you fish with three people in the boat alot you will not miss it. I like to sit on the rod locker and retie baits and it is much easier to get into your center locker with it out. Just my opinion.
Kentucky lake in the spring is the best. Ill be there the last week in april and if it is any thing like last year it will not disappoint. Those fish get up in the bushes and you can catch a boat load of fish.
